When Chris Bianco started the diminutive Pizzeria Bianco inside the back corner of a neighborhood grocery store in 1988, little did he know that he would be such a driving force in the slow food movement and specifically the artisanal pizza front. In 2014 he opted to open his second pizzeria in Downtown Tucson This isn't just artisan pizza. This is THE artisan pizza. Bianco's pies have been crowned the best by Bon Appetit, the New York Times, Vogue and TV chef personalities Rachael Ray and Andrew Zimmern. In 2003, author Peter Reinhart's book "American Pie: My Search for the Perfect Pizza," hailed Pizzeria Bianco as the best pizza in the U.S. That same year, Bianco scored a James Beard Award for the best regional chef, the only pizzaiolo to earn the honor. His fans include Oprah Winfrey, Martha Stewart, and former President Bill Clinton.

Caruso's was started in the 1930s by Nicasio ("Caruso") Zagona, and the restaurant has remained in the family since then. Tucson's original Caruso's was located about one block south of its present site. An August rainstorm and flood literally washed the place away, so they moved to higher ground, where they have remained for the past fifty years or so. The techniques for making their pasta (for ravioli, lasagna, manicotti, and cannelloni) and homemade sauces are basically the same as they were a half-century ago!
